New Mexico, the Land of Enchantment, serves up more than 400 years of flavor. We have some of today’s best restaurants and chefs, reinforced with James Beard awards, kudos in Gourmet, and breathless Food Network attention. We still revere tradition here as well as innovations, and continue to celebrate the early blend of Native American and Spanish cultures that created our singular cuisine, different from anywhere else in the American Southwest or Mexico.
Come savor New Mexico’s special traditional versions of enchiladas, tamales, burritos, posole corn, pinto beans, and stuffed pockets of cornmeal dough called gorditas. Chiles form the core of New Mexican cooking, often in sauces made from our distinctive fresh long green pods or their more mature dried red counterparts. Always spelled with an ‘E’ on the end, chile reigns as our state vegetable, even though it’s technically a fruit. Our pungent pod adds the pizzazz to the state’s beloved green chile cheeseburger, a food so exalted that our Governor holds an annual State Fair challenge in search of the best. If you like your food really fiery, don’t miss red chile-marinated pork carne adovada. You’ll find these culinary treasures from border to border, often in iconic settings dating back generations. Today, though, chile can top a pizza, turn into tempura, or enliven a chocolate truffle.
Much of what you’ll sample here grew here too. Generations-old orchards and vegetable farms nestled along the Rio Grande provide much of our restaurants’ produce. You can find this bounty and more, including New Mexico pecans, pistachios, and cheeses, at 50 farmers’ markets, and at charming farmstands throughout the state. Our wine regions are North America’s oldest, and three dozen wineries offer stunning scenery with their tastings. Microbreweries and brewpubs quench thirst too, making beers in all popular styles, as well as crafting a few local originals.
Throughout the year, festivals celebrate everything from agricultural crops like green chile to Greek holiday foods, and from the latest wine harvest to the world’s largest enchilada.
